The Story
Hospitality has long been described as a 'noble' pursuit. Bringing people into your home and offering them exceptional food and drink in a gracious manner is the signature of a good restaurant, and that's why, when choosing a name, we came upon Noble: An American Cookery. Noble defies the false conventions of stiff manners and standing on ceremony; and instead seeks to emulate the genuine smile of an enduring host while showcasing the finest seasonal ingredients in innovative preparations.
Noble was hand-crafted from the inside out to preserve the beautiful structure that we purchased in 2005 with significant updates to the interior, to make it warmer and more welcoming. Located in the Rittenhouse Village neighborhood, Noble joins Tria, Tinto, Capogiro, M�m� and Melograno in revitalizing the dining scene west of Rittenhouse Square. Noble's granite sidewalk counter is the first of its kind in Philadelphia, with two large canopy windows that open to allow outdoor seating that faces into the restaurant. Three soaring skylights draw the depth of the Philadelphia sky directly into the upstairs dining room, while the vibrant bubinga-wood bar is an ideal place for a great glass of North American wine or a pint of local craft beer.
Noble's mission is to make you feel at home and to create a truly special dining experience, from the inviting and original decor to the perfectly prepared menu of simple, seasonal ingredients. It is a beacon of warmth and fine cookery for our times, and the realization of a long-time dream for the two friends who created it:
Bruno Pouget met Todd Rodgers while surfing in Long Beach Island, New Jersey. Together, they opened Blue, which quickly became known as the area's premier dining destination, earning numerous "Best of the Shore" nods from Philadelphia, New York and New Jersey publications. With the purchase of the property at 2025 Sansom St. in 2005, the two finally felt ready to take on the challenge of opening a restaurant in downtown Philadelphia, which had long been their dream. Since 2009, that restaurant is Noble: An American Cookery.

A dual French and American citizen, Bruno is a passionate and creative entrepreneur. As a gifted real estate developer, Bruno opened his first restaurant, Philadelphia's Caribou Cafe, in 1989 and operated it successfully until he sold it in 2003. His passion for design as a means of achieving more gracious hospitality has led him to personally oversee the construction and design of each of his past and present restaurant properties: Blue, Noble, Caribou Caf� and APO Bar + Lounge, where he serves as investor and designer.
TODD RODGERS - Partner
A hospitality professional in every sense of the word, Todd brings a gracious understanding of his guests' needs to Noble. His commitment to their comfort is evident in the countless hours he spent during the construction of the restaurant conceptualizing how the space would function best as a warm, welcoming home. He is also the talent behind Noble's exclusively North American wine and beer list, with 25 wines and 25 craft beers hand-selected to complement the creative, Seasonal Modern-American cuisine and to elevate each guest's experience. Todd honed his hands-on hospitality skills at Blue, creating one of the Jersey Shore's finest restaurants and accumulating countless recognitions of excellence. On any given night, he can be found greeting guests with his good nature and knack for predicting and exceeding their every need.
